Kanwa
Kanwa, also known as Limestone, Akanwa, Akanwau, or Potash is a sedimentary rock composed of carbonate minerals. Limestone has numerous economic usages, one of which is its culinary importance in the food processing and preparation. In Africa, limestone is commonly used when cooking many traditional dishes. In Cameroon, limestone is a key ingredient when cooking Achu Soup. It acts as an emulsifier to create the yellow homogeneous mixture (the key characteristics of Achu Soup) from combining the palm oil and water that would otherwise be immiscible.
