Goat Meat Pepper Soup

In most West African native foods, there are some dishes that are prepared with a combination of spices to define the rich culinary cultural heritage of the country. One such dish is Pepper Soup. A dish that can be cooked with a variety of proteins to and adopts in its names based on the protein used. Example for this recipe, the protein of choice is goat meat  which gives the dish its name goat meat pepper soup.

P E P P E R S O U P R E C I P E

Ingredients 

a. 2Ibs of Goat Meat

b. ½ Large Onions

c. 3 Habanero Peppers

d. Thumb size Ginger

e. ½ Cup Njangsang

f. 1 Alligator Pepper

g. ½ Tablespoon White Pepper

h. ½ Tablespoon Black Pepper

i. Salt to taste

j. Bouillon or Maggi

k. 2  Pebbe Spice

l. 2 Cloves of Garlic 

m. 1 Alligator Pepper Leaves

How To Make Goat Meat Pepper Soup

1.Wash the goat meat thoroughly with hot water to remove fat and residual blood.

2. Place the washed pieces of goat meat into a pot. Add salt, bouillon, and water to reach halfway up the level of the meat.

3. Turn on the stove and cook the meat on medium heat until it is about 75% cooked. Then reduce the heat to low and let it simmer.

4. In a blender, combine onions, garlic, ginger, black pepper, white pepper, alligator pepper, habanero peppers, and Njansang. Add 3 cups of water and blend on high speed until smooth.

5.  Place a sifter over a bowl and pour the blended mixture through the sifter to separate the spice solution.

6. Return the unblended spices to the blender, add 1 cup of water, and blend again.

7. Sift the mixture a second time. Discard the remaining spice particles in the sifter.

8. Pour the smooth spice solution into the pot with the goat meat. Stir well.

9. Cover the pot and continue cooking on medium heat until the goat meat is fully done.

10. Dish out the goat meat pepper soup and serve with boiled plantains or a side of your choice.
